I always try to keep the kitchen clean !! Or a t least we both try. We are both eating different times of the day, during the work week, so the kitchen is always seeing some action.

The "sponge" or the dishtowel, is one of the main things to be concerned about. If you rinse out and microwave the sponge,( for one minute) it kills a large portion of the germs that are within it.

Also be careful with cutting boards. Make sure they are clean between each job  !!

I saw a report on sterilzing sponges and it recommended 3 minutes since the germs have to be exposed to high temps for a period of time.  One minute usually doesn't cut it.

I also use 10% bleach in a spray bottle on my counters since it's the cheapest and best sterilizing agent. (you can also just the Clorox Anywhere spray which does about the same thing.  Just be careful about colors that bleach will cause to fade out.

Also, your microwave can be a mess so I just toss the plate at the bottom in the dishwasher along with the cutting boards and let it go through a sterilzing cycle.  The temp inside the dishwasher has to reach 165 degrees Fahrenheit for this to work.

I would be concerned if I left a wet sponge in the microwave for 3 minutes. ( At least the microwave we have) Your probably right though, could require a little more time. Three minutes in our nuke oven, and that sponge would be toast !! :)
