How likely is it that as a female I could have contracted HIV from a single encounter with a positive man. Unprotected vaginal sex, with him ejaculating inside me.
I know about the waiting period, and as it has only been 3 weeks I just need SOMETHING to help me while I wait. I can't sleep or concentrate on anything else :( could that one mistake be the defining moment of my life? Please someone help me know my chances either way. Thanks in advance!!

Here we don't find that guessing about percentages of risk to be helpful since it's all guesswork. Yes, you had a risk and you need in the future to make sure any partners you have are always wearing a condom for vaginal and anal intercourse. No exceptions.
You've had a single incident. That's better than it having been multiples. The average time to seroconversion is 22 days. All but the smallest number of those who are going to seroconvert will have done so within 4-6 weeks after an exposure. If they man you were with is taking HIV meds that would decrease the level of risk. Still risky but less so.
You can test initially at 6 weeks post the incident. If you get a negative result at that point then there is a strong likelihood that you will continue to test negative.
Meantime you have to make a real effort to focus on other matters in your life. It will make the waiting time a lot easier than you may imagine is possible.

Thank you very much for such a quick response. The work you guys do on here is amazing. Just knowing that I can reach out for help has alleviated my anxiety about waiting. I will do my best to distract myself and learn from this. Thanks again :)
