I am making a confession

Even as a young child I knew I was a little different, a little odd. I loved to play with my GI Joes, play basketball and go fishing. Butt....
I also longed for an Easy Bake Oven. Alas, Santa never brought me one....

As I grew older (8 years old now), I played tennis and soccer but my parents allowed me to take dance lessons as well. That Christmas, Santa brought me the 1975 edition of The Joy of Cooking. I dared not tell any of my friends about the dance lessons or the cook book for that matter. Even at that age, my friends were making "fag" jokes. I knew my oddness might not be acceptable and I so much wanted to be part of the pack.

skipping right along to adulthood....

I have grown into someone who is very comfortable with himself, even though he realizes he is a bit different and doesn't follow the mainstream.

There is something else that I realized from very early on which I have suppressed all of these years.
But I live in a society where my desires and passions for this are looked down upon.

I have a confession to make


I  LOVE  FRUITCAKE!

there I said it, I feel much better.

Does anyone have a good recipe for it?

All righty, I found this recipe in my 1983 version of Better Homes and Gardens New Cookbook.  I have no idea if it's good or not, because I don't eat the stuff.  BTW, nice hearing from you again.

1 1/2 cups all purpose flour             1tsp ground cinnamon
1/2 tsp baking powder                   1/4tsp baking soda
1/4 tsp ground nutmeg                  1/4 tsp all spice
1/4 tsp ground cloves                    3/4 cup diced mixed candied fruits and peels or snipped mixed dried fruit
1/2 cup raisins or dates (pitted)      1/2 cup candied red or green cherries, quartered
1/2 cup chopped pecans                2 eggs
1/2 cup packed brown sugar           1/2 cup orange OR apple juice
1/3 cup margarine, melted              2 TBS light molasses
Brandy OR fruit juice

Grease an 8x4x2 inch loaf pan.  Line bottom and sides of pan with brown paper to prevent overbrowning; grease paper.  In a bowl combine flour, cinnamon, baking powder, baking soda, nutmeg, allspice, and cloves.  Add fruits and peels, raisins, cherries, and nuts; mix well.  Beat eggs; stir in sugar, juice, margarine, and molasses till combined.  Stir into fruit mixture.  Pour batter into pan. 

Bakein a 300 degree oven for 1 1/4 to 1 1/2 hours or till a toothpick inserted near the center comes out clean. (Cover pan loosely with foil after 1 hour of baking to prevent overbrowning).  Cool in a pan on rack.  Remove from the pan.  Wrap cake in brandy- or fruit-juice-moistened cheesecloth.  Overwrap with foil.  Store in the refrigerator for 2 to 8 weeks to mellow flavors.  Remoisten cheesecloth about once a week, or as needed.  Serves 16.


Heck, sounds like a lot of work.  Just buy some fruit cocktail and pour yourself a glass of Brandy.

I have a lot of friends that are Chefs and none are gay. They were also big sports jocks in high school and college. Are they different? Hell yeah they're different. They can cook unbelievable meals and they take home 6 figures on their paychecks.  :D If that is what you call different, then hell, don't feel bad about it.

This is  really good with a hot cup of coffee.

Fresh Apple Cake

Ingredients:

1 teaspoon salt
2 teaspoons baking powder
3 cups chopped apples
1 cup chopped nuts

Mix first 7 ingredients together in a large mixing bowl until thoroughly mixed. Then add apples and nuts & stir to mix. Bake in a greased and floured 13X9 pan or 3 round layer cake pans. Bake at 350 degrees until done.

Icing:

1 stick margarine
1 cup brown sugar (packed)
2 tablespoons (or more) milk
1 box powdered sugar

Melt margarine and brown sugar together in saucepan. Then remove from heat and mix powdered sugar and milk alternately into melted mixture. It usually takes more than 2 tablespoons of milk. i just add milk until the mixture is the consistency I want for an icing.

Thanks for the recipe minismom  sounds like work, but hey  I love cooking  ( I once single handedly prepared a 8 course meal for 12 for New Years 2000) ,

you too Dan J (I live near a place called Apple Hill in Northern CA,  sounds like their apple hill cake,, which is very tasty)

Checked out the Easy bake ovens   they look really cheap now as with everything else now... Lincoln Logs, Tinker Toys etc

UGH - fruitcake - a complete waste of time I think...It might be useful after it hardens and goes stale, we could use it to hit presidential hopeful Huckalberry over the head with it... But I'm with Wini, if you want to make some nice fudge, maybe bake me a chocolate layer cake you should come over as soon as you're done...HURRY THE HELL UP ALREADY !!!

Apple Hill was part of my old haunting grounds.  Used to go there all the time when I lived in Sac. 30 years ago.    I can't remember the orchard I liked the best but it might have been something like Kid's Inc.  or Larsons or something like that.   I know it was on a back road and they had the best apple pie.   Like 5" high.    We would buy apples by the boxload and just bake, bake bake.  To this day I'm still a busy baker.

Dan....don't forget to add a little nutmeg and cinnamon to your cake.

It's funny you mention this.  When I was four, I got an Easy Bake Oven for Christmas.  It was so cool.  Of course, I also got some of those little 'Army men', Tonka trucks, dozers, etc, and I loved all my toys (both the boy and girl toys!)  A few months later, on my birthday, I got a tea set.  I think the only person that mentioned it being odd was my dad's mother.  My other grand parents didn't care, though.  A few years ago, my husband and my mom independently got me Easy Bake Ovens as jokes.  I gave one away to a friend who wanted it for their child, but I kept the other one... we've even played with it.

As a professional baker of long standing, I can assure you I have heard most every fruitcake joke out there. People either love fruitcake or hate it. There doesn’t seem to be any middle ground – and the fruitcake haters aren’t shy about telling their opinion even when standing the middle of the shop where we were selling them! Those icky things passed off as ‘fruitcake’ with all the hard bitter ‘fruit’ really are despicable, but a true fruitcake is just grand....

Of all the dozens of recipes I’ve made (chocolate, no-bake, mini-cups, fresh fruit etc), this is the one that ALWAYS is made. Like most fruitcakes, it doesn’t matter much which spirit you add here – rum, whiskey, amontillado or a mix of them. I especially like that my favorite recipe is from a fellow fruitcake, Craig Claiborne. Since it has to sit for a while, you better get started on it now!

Walnut and Ginger Fruitcake (Craig Claiborne)

275 oven      10-inch tube pan   12 servings

½ lb candied ginger cut into ¼-inch dice (about 1 c.)
1 ½ c. golden raisins
3 ¾ cup walnut pieces (preferably black walnuts)
3 c. sifted all purpose flour
1 t. baking powder
salt to taste
1 lb. butter, soft
2 c. sugar
6 eggs separated
½ c. Madeira or sweet sherry

Mix the flour, baking powder and salt. Add the raisins and ginger, stirring to coat all pieces. Set aside.

In a bowl of an electric mixer, cream the butter, sugar and egg yolks. Gradually add the Madeira. Add to the dry mixture.

Beat egg whites until stiff and then fold into the batter.

Generously grease and line a 10-inch tube pan. Turn batter into pan and bake at 275 degrees for 2 ½ hours (internal temperature of the cake will be 200 degrees).

Let cool briefly and remove from pan while still warm. If desired, add more Madeira as you let it mellow for at least 10 days.

although I do have to make another confession.....
Although I eat a very healthy diet  and get daily exercise ,I received some bad news about my lipids last week (most likely due to going back on meds) .... Cholesterol  509   Triglycerides  3000 :o

I wont be eating too many sweets or feasting on typical holiday foods (well maybe a nibble or two of fruitcake). I do enjoy baking and cooking things for other people though.

I absolutely loathe fruitcake.  But today I decided I'm going to bake three different kinds of cookies and two different kinds of fudge for X-Mas.  My daughter in Washington wants me to send her some.  I've never sent cookies or any food for that matter through the mail. 

Shark, don't feel lonely about your cholesterol/triglycerides.  I've been on Lipitor for quite awhile now and even though my cholesterol is pretty much under control now, my triglycerides are always elevated.  I keep telling people "after the holidays, I'll start eating healthy again." :D

My mom tried to mail me baked goods a couple of times (from oregon)  it arrived spoiled. So I wouldn't advise it, unless someone out there has suggestions of keeping things fresh.

The thing about the high tri-s   is that I have had been hospitalized with pancreatitis twice now (for a total of 15 days) . And conveniently during the holidays.

here's to healthy eating ASAP!!!! oh yeah and better meds damnit!

Ever hear of Amish Friendship bread? I got a starter of it this past summer and changed the recipe to make muffins instead of loaves. Since every 10 days or so I have to bake, I've made several other changes and cooked up a bunch of different batches of muffins:

chocoloate/choco chip/walnut/mashmellow
lemon/cherry/coconut
lemon/poppy seed
orange/cherry/walnut

For Thanksgiving, I created pumpkin/cranberry/walnut muffins
For Christmas, I turned them into fruitcake muffins (using fruitcake mix/raisins/walnuts)

Everyone is clammoring for my pumpkin muffins again (the last batch I made I topped with cream cheese icing MMMMM); and I was very surprised that the Fruitcake ones are in demand too. Since they are more muffins than regular fruitcake, I think people like them more. I'm think going to drizzle sugar icing over them to spruce up the batch I bake for Christmas Day.

Lucky for me, cholesterol and triglycerides are things I don't have to worry about. My problem is keeping weight on :o, so I get to eat all the goodies I bake!

perhaps you could try making little mini size ones, in those individual loaf pans? they freeze pretty well, so you could keep a supply in stock.. less temptimg to eat them when they're frozen  :)

One of my most prized possessions is a T-shirt from Claxton, GA.  It bears the logo seen below.  It was given to me by my dear friend, Scott.  He was from Claxton and proudly proclaimed that he came from "the fruitcake capital of the world".

Hmmm, I never had fruitcake. You don't see too many baking that in the hood.... ;D But I do have a taste for some nut bread....I can see the jokes coming now..... :D

I make a really good apple walnut cake.  I shred the apples with the peel on them.  It makes the cake really moist and the peeling gets soft so you don't know it's there.  Sharky, I'll have to send you the cookies, cakes, fudge, ect. that I make for mini with Splenda. (Her cholesterol and tris. are always too high. And, she has problems putting on weight.) The only thing I can't figure out is how to make sugar-free rice krispy treats. Try Splenda.com for some really good recipes.

ah, the amish bread? I got this little glob of batter from a friend this past summer. Every five days, I feed it some flour, milk, and sugar. Every tenth day, I fed it some more and bake some of it up. In between those days, it sits on the counter, bubbling. Sometimes it oozes too. :o

the basic recipe adds flour, eggs, cinnamon, sugar, etc to make a nice sugary cinnamon sweet bread. I can only stomach cinnamon (or garlic) in small amounts or I get really sick, so I started experimenting on adding other "stuff" to the batter.

My friends and my partner's co-workers have been my more-than-willing guiena pigs.  :D I was smart and made my pumpkin muffins at the start of the month of Nov to get them taste-tested before everyone was tired of pumpkin pies.  ;) Everyone said that the dried cranberries really made them "taste like thanksgiving".  ;D

I tested my fruitcake version out before everyone got tired of fruitcake too. People seemed to like the light "bread" of the muffins compared to the heavy-tasting "cake" of regular fruitcake.  ;)

(if I'm going to stay ahead of the crowd, I've got to think fast cause I've got no clue on what to add to make Valentine's muffins and Valentines Day is already just around the corner  :D)

and to bring this back around to a Christmas-related cooking theme, we just iced up 12 dozen cut-out cookies at my friend's house this weekend, with the "help" of her grandkids. (The rule is you MUST ice a dozen cookies before you can eat one! >:( ) During this week, my friend and I will make about 6 doz pumpkin cookies, and 1/2 doz applesauce cakes. Next weekend, we'll make a ton of orange cookies and buried cherry chocolate cookies. We'll also make several large trays full of choc and pnut butter fudge, along with walnut balls covered in powdered sugar, and date-nut pinwheels. (I've probably forgotten something and somewhere in there, I'll have to bake another batch of MY muffins too!) My friend does this every year to provide a "goodie box" to all her friends and family for the holidays. It's like the keebler elf factory over at her house this month as we mass-produce the sweets.  :D ROFL

i have searched, & i have found...  :)

Walden Farm Dips Marshmallow Fluff - sugar free, looks like you can buy online from them

La Nouba sugar free marshmallows - apparently these are good for krispie treats, smores etc - contact them for a local retailer

and a recipe for making your own sugar free marshmallows or marshmallow creme/fluff -

Ingredients:
3 envelopes unflavored gelatin
5 Tablespoons Splenda®
3 egg whites
2 teaspoons vanilla extract
1/4 cup cold water
3/4 cup boiling water
1/2 teaspoon marshmallow flavored oil [optional]
(LorAnn or American Spice)

Sprinkle gelatin over cold water in a mixing bowl. Set aside for 5 minutes to soften. Add to boiling water in saucepan; cook and stir until gelatin is dissolved. Remove from heat. Cool to consistency of thick syrup. Stir in Splenda® and vanilla (and marshmallow flavored oil if using.) Beat egg whites till soft peaks begin to form. Very slowly, trickle a small stream of gelatin mixture into egg white, beating until all gelatin is mixed in. Continue beating until light and fluffy (but not until they're dry.)

If you're making marshmallow creme, pour into a jar (jelly jar, peanut butter jar, etc.) and refrigerate. If making mini marshmallows, pour into greased and floured pan, cool to set, and cut into size desired. (I guess for krispie treats, you'd just mix the rice krispies in before it cools..)

hope that helps -  i might try that recipe myself, i have to watch the sugar levels too

Oh, kate, you are so awsome :-*!  Thank you  :-*thank you  :-*thank you!  We will definately try making these and see how they turn out.  It's so funny how something so "silly" as a marshmellow becomes so important to a wee one when they can't have them.  Thank you for the links, too.  Mini will be eating rice krispie treats for Christmas,yet!

The sugar-free marshmellows didn't work :(  Neither did the rice krispy treats.  They stayed really soggy and the consistency of rubber.  Dh told me to try again, and so I will.

even though this isn't fruitcake...... :-\

I found a recipe for sugar free rice crispy cookies ( I guess you have to take out the chocolate chips though) and yeah that's a lot of butter but.......

Sugar Free Rice Krispie Cookies

1 cup crushed Rice Krispies
1 cup sugar substitute
1 egg
1 1/2 cups Rice Krispies (not crushed)
1/2 tsp salt
1/2 cup butter, softened
1 cup whole wheat flour
1 tbsp vanilla
3/4 cup chocolate chips
2-3 tbsps water, if necessary
1 tsp baking powder

Beat softened butter, egg, vanilla and sugar substitute together until fluffy.
Combine crushed cereal, baking powder, salt, and flour, until blended.
Add to above mixture, adding water if necessary.
Add rest of cereal, and chocolate chips. Keep adding water if too dry.
Roll into balls, flatten, and place on cookie sheet at least 1 inch apart.
Bake in 375° degrees oven for 10 minutes.

This sounds really good, I'll have to try them tomorrow.  My homemade marshmellows turned into rice krispy treats didnt' turn out so well.  I'm determined that mini will have a rice krispy treat (or cookie) if only because she really wants one.  Thanks, sharky hun!

hey Sharkie,

My mum makes the best damn fruit cake on the south coast. Well, according the Country Women's Association she does. She keeps winning the prize for best in show in her area for fruit cake. She made it to the finals at the Royal Easter Show one year but didn't win.

I would love to pass on the recipe, but it's a family secret. Mum would kill me if I posted it on the web. One thing I do know, is that each year's Xmas fruit cake contains a bit of last year's cake they she puts away in a special place.

I'm getting the feeling here that fruit cake is not that big in the US. Don't you all have it at Christmas time? I/we do, and I love it, but only then. Xmas wouldn't be xmas without mum's fruitcake, and her plum pudding.

Try this one though. You need plenty of time up your sleeve though.

Ingredients
600g sultanas
400g raisins
200g currants
100g glace cherries, quartered
100g glace orange slices, finely chopped
80g glace ginger, finely chopped
290ml brandy
1 1/2 cups plain flour
1/2 cup self-raising flour
2 teaspoons mixed spice
1 teaspoon ground ginger
250g butter, softened
1 cup dark brown sugar
4 eggs, at room temperature
2 tablespoons orange marmalade
pure icing sugar, to serve

Method
Place dried fruit, glace fruit and 1 cup brandy in a large airtight container. Mix well. Cover and stand overnight or preferably for 1 week, stirring occasionally.
Lightly grease a 9cm deep, 20cm (base) square cake pan. Line base and sides with brown paper and baking paper (see note). Preheat oven to 150°C. Sift flours and spices into a bowl. Using electric beaters, cream butter and sugar in a large bowl until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Add marmalade and 1 tablespoon flour mixture and beat until well combined. Using a large metal spoon, fold remaining flour mixture into butter mixture.
Add fruit mixture to butter mixture and stir until combined. Press into pan. Smooth surface. Tap base of pan on workbench to settle fruit and remove air bubbles.
Cover cake with 3 layers brown paper. Bake for 3 to 3 1/2 hours or until a skewer inserted into the centre comes out clean. Drizzle remaining 2 tablespoons brandy over cake while still hot.

I've never actually eaten any fruitcake either. I'm a total weirdo when it comes to trying new food. I have food issues, some phobias.
I do love banana bread. Fruit cake is so busy looking it intimidates me. LOL

We found some sugar-free marshmallows in one of the local shops yesterday though  :)  I'll try using them for some krispie treats tomorrow, and let you know what happens - if they work (& more importantly, taste ok!) i'll get some more & send 'em over to you.

I wish I could find some sugar-free marshmallows!  I love to just eat them plain, but being a diabetic, those sugar-bombs are not really good for me. :-\

Oh man. I don't think I could eat the whole loaf. My stomach has been so tricky since starting meds. Plus I have a H pylori infection the docs are waiting to treat till my tcells are higher. Because the treatment has a drug interaction with my HIV meds, I'll have to take a 2 week break from my HIV meds. 
So food doesn't always sit well with me no matter how delicious.

Besides that I don't want a three foot wide ass like my dearly departed granny. LOL

minismom -

the rice krispie treats worked!! and they tasted pretty good too  :)

they took slightly longer to melt than regular marshmallows, otherwise exactly the same; i just used the standard treats recipe (3tbsp butter, 6cups krispies) and left them in the fridge for about 45mins to set.

i asked my brother to taste test them (told him to think like a 7 year old before delivering verdict) He commented that they were a tiny bit less sweet than the real thing, but as he proceeded to eat most of the tray, i figure it wasn't a problem...
