Confessions Of A Crunchy Craver....

For the last several months Ive had unstopable cravings for crunchy vegetables. At least its a healthy obsession. I usually have at least three carrots a day, radishes and celery dont last long either, If they weren't soo expensive this time of year I could easily eat a red Bell pepper a day and sugar snap peas are kindof like the vegetarian version of Crack.  I recently picked up not one but TWO of the mega Sams Club jars of baby Gherkin pickles, as well as a pillowcase sized bag of Edamame.
alot of this stuff would probablly be a bit healthier if I didnt dunk it in Green Goddess dressing, but I mostly use a Soysauce,Lemonjuice and Chili/garlic vinaigrette that truly rocks the house.
My last labs were pretty good, so the antioxidants just might be doing their thing.
I recently got ahold of a nifty little kitchen gadget , a 'spiral slicer' which will make Angel Hair thin strands out of any hard vegetable, and Daikon radish has never been better. Ditto with Turnips and Beets. And it makes for some really fabulous looking salads, Im considering making a Rainbow Flag of spiral sliced veggies but Im kinda stumped about what to use for the Blue bar ??????
might just have to fudge it with some blueberries ( which are also fabulously crunchy if you freeze them. just like Grapes... yumm factor of about 9.5 )
Anyway , thats my little rant about my latest oral fixation... Anyone else ???

Oh I guess Id better add this :
  • Spicy Lemon Dressing
    1/4 Cup Lemon Juice (yes fresh squeezed you fucking Savage)
    2 Tablespoons soy sauce
    1/2 teaspoon grated garlic
    1/4 Teaspoon Chili Garlic sauce ( AKA Sambal Olek) passed through a strainer to remove the seeds
    1/2 teaspoon salt
    pinch of black peppa
    5 Tablespoons Canola or vegetable oil ( olive oil is too strong, but if you must go with the lightest one you have)
