I have just learned that my entry, a Heather Honey Mead,(it's a wine made from honey), into the American Homebrewers Association  National Homebrew Competition has gotten past the first round of judging with a second place. I now send three more bottles to the second, and final round. I wont get the results until the National Conference in Denver in June. I'm now up against the top 35 entries from the US and Canada. I will be at the conference to hopefully accept an award. I have spent nearly 14 years working on this one 5 gallon batch of mead. I am so thrilled that I have been writting everyone that I know for the last hour.

There are commercially available meads at a lot of liquor stores. The better handmade versions are a hunderd times better. The wineries and meaderies who produce it dont have time time and space to spend years on a batch. I don't serve anything less that 2 years old.

It depends on which strain of yeast and how much honey that I use. Usually about 14 to 16 percent.
