Need recipe help

One of the guys that I am dating has diabetes and I have to make him cookies. 

Since I have to make them from scratch, and I quote "none of them stupid cookies in a roll from the grocery store", is there anything I should avoid when I make them?  I know he watches his diet and does pretty good with it. 

Luckily enough for me my work schedule is hellish until Christmas and he is going to Florida the day after Christmas and won't be back until the first week of January so I have time to figure out what kind to make.

He has this idea that I should make chocolate chip cookies, but I usually butcher that kind and they end up in the trash can.  (Maybe he will settle for fudge instead).

Is he as demanding and picky as you make him sound?
If you make good fudge, offer him that.  If he balks, he's not a keeper. Anything homemade is a nice and generous offer. He should appreciate it.

About the cookies - oatmeal chocolate chip cookies are usually likely to come out delicious..

Or make rice krispie treats with chocolate chips and cranberries or diced dried cherries.

Peanut Butter cookies are pretty tasty and you wont have to use too much sugar with the already sweet taste of the peanut butter .

Maybe you can mix savory/sweet flavors together to lessen the amount of sugar in your recipe. Something like rosemary+chocolate is very good! Or maybe lemon and poppy seeds, if not into savory flavors?

Anyway, good luck! Making some sugar cookies right now with some lemon peels :)

Make OATMEAL chocolate chip cookies and use butter. They may be crispy but will still have the chew factor. The more junk you throw in - raisins, chocolate chips, nuts, the more you decrease the possibility of failure and raise the mouth "interest".

If your cookies are coming out hard you are cooking them too long.  When you take them out they continue to cook on the sheet/rack for a while longer while the heat is still being "applied".  If you want them to come out softer pull them out earlier.

Try to put them on a cold grill instead of leaving them on the cooking sheet, so they'll cool underneath and not become hard. :)

Two guys.

One is older (15 years older), semi-retired and used to picking up and going wherever, whenever he wants to.  Next year on his plate is Daytona (for both NASCAR and bike week) and Sturgis, both of which I am invited to, plus the bike things around here.  I will go to San Diego and maybe the Rock Legends Cruise but can't take off for the others.  (although if it works out I may think about missing Diego for Sturgis)  I'm not sure how he will do with my whacked out schedule of school and work.  This is the one I'm making cookies for.   :)

The other is a boy-scout troop leader guy.  If he has the same stupid views as other boy scout leader people that will be a deal breaker.

They both have the same rule for me: NO FALLING ASLEEP ALLOWED ON THE BACK OF THE BIKE.  The one doesn't have a back rest so it's a given that I won't, the other has a full dresser so falling asleep is a very good possibility.

Yes I can fall asleep on the back of a bike, and yes I have been bungee corded to a back rest and yes it is a stupid and dangerous thing to do.

They are both Eagles fans   :(
