Supposedly, the burnt areas of meat or bread / vegetables contain high levels of cancer causing chemicals, a bit like inhaling cigarette smoke, burnt particulates. But I think the key here is everything in moderation. one BBQ per week won't turn you into a cancerous wreck :-). Perhaps a healthier way would be to smoke food rather than BBQ / burning it.
