« on: October 11, 2006, 11:47:20 am »
Here are some photos from my 40th birthday party. It was a beach theme...along with the 40 theme. The one is of the cake, chocolate/ peanut butter icing...yummm, and the second is me under the 40 Mistletoe!

Thank you everyone! I did have a wonderful time! Yes, that is me under the 40 mistletoe.

blue love, the cake was from a bakery, so I don't have that recipe, but I do have another peanut butter icing/ filling that I have used in the past. It is really unhealthy, but oh so good!

Here it is:
Peanut Butter Icing/ Filling
1/2 cup soft butter
1/2 cup Crisco (solid shortening)
2 cups peanut butter, chunky or creamy (Jiff or Skippy, etc.- not a natural pb)
1 tablespoon vanilla
3-4 cups of confectioners sugar
Milk as needed

Whip the butter, shortening, peanut butter, and vanilla really well. Alternate adding sugar and milk. Drizzle in the milk to reach the desired consistency. Whip until light and fluffy.

More milk will make it spreadable for icing, and less milk will make it thicker for fillings.

I have used it for cakes, and for the filling in Whoopie Pies....very yummy!!
