Attitude in the forums? What??!!

I've been reading and noticing a slight uptick in the moodiness of the forums lately, anyone else noticing? It's like there's been a fresh mix of people coming in and the people that have been on here awhile are starting to bicker. Wtf. Come on people were here to support each other, make friends, talk. Not belittle, condescend, and hate. If we make a joke about something health related, don't take it personal too, I've noticed that too.

The forums haven't boiled over in many a moon. It's pretty much just warmed over mush. Heck, disclosure threads rarely cause a ripple. It's helpful to many so it meanders along.

Most people here in the show me state . unless from the northern part don't put sugar in the cornbread. That is the from scratch kind, Now I do know that the northern part of the state use more jiffy mix which has a lot of sugar in it!  so really both can be right.

Goodness, I envision Ann sitting with her BAM hammer sipping coffee with little steam spirals spewing from her ears.  She has to be quite eager to use it again. 

Anyone offended by the mild attitudes these days would surely have perished a few years ago.  I guess the old aged AIDS fuckers have finally settled quite well into our rockers and reminisce about the glory days of raw nasty sex without fear of catching a lifelong companion.

The only thing I know about cornbread is that it should be baked in a cast iron skillet then smothered with soup beans and carrots then topped with ketchup and onions.

I actually still use the iron skillet my grandmother gave me when I went to college, and she dug it up from her stash out in the garage. And the garage was made of wood that my grandfather built himself, midway to the smoke house where he smoked his own hogs.

Zach is right. I cook most time without a recipe , Just by site and know how. handed down mostly by my dad . he was the oldest of five boys and grandma taught him everything before she died at a young age. and Dad passed it down to his kids. Heck he even taught my mom how to cook , when they got married and I have his iron skillet a must in any home cooked meal!

My mom uses a handed down skillet she also coats the crust with a sugar crust for a bit of sweetness, it's delicious!

My childhood home burnt to the ground on Jan 2, 1971 during a blizzard.  The only things that were salvaged were the cast iron skillets and my mother's Bible. 

When my granny died I was given one of her skillets.  I REALLY did not want it!!!!  Bill had no problem with it but I was grossed out by the thought of the built up crude on it.  Even after using a grinder on my drill, it just looked WRONG.  All I could imagine was bits of bacon or some other critter deeply encrusted there from the 40's.

Speaking of granny, I think she caused my neurosis.  Every morning, she fried bacon and dipped big globs of home made bread into the grease and gorged away.  She probably could have lived to be 100 if she had eaten more healthily.

i'm lucky to have had two vastly different southern grandmothers... gram in new orleans and granny that raised me in the appalachian foothills. i will never tell who's cornbread i prefered, and i know better than to serve the wrong kind in the wrong parts. i've always been interested in the not so subtle differences in foods across the south; cornbread, bar b que, social stews. these can cause hurt feelings at get togethers.

speaking of which, i thought this was supposed to be a cat fight with claws and attitude... bunch of old women talking about food, is this what we are?!

I use a VERY small amount of sugar -- I think a tablespoon -- but that's also because I use non-supermarket stone ground coarse cornmeal.

I grease my pan with bacon grease, and it's generally from hand smoked fresh pastured bacon. I definitely only use buttermilk.

30% say sugar only goes in "Yankee" cornbread. I can assure you that the cornbread for sale at Di Bruno Bros. (Philadelphia's premiere gourmet emporium) contains a lot of sugar, making it more of corn cake.

Extra credit to my grandmother for also making her cornbread with pork cracklings inside -- DELISH! My maternal family roots span from Southside VA/Tidewater through eastern NC to just south of Charlotte in SC. BBQ must be pulled pork with a vinegar non-tomato based sauce. Social stew is always authentic Brunswick.

If your family did not make their old money from tobacco then they just aren't really Southern.

The way I think of it cornbread doesn't have much sugar, is coarse in texture and is made in an iron skillet. Corn muffins and corn cakes are sweet with a lighter texture and can be made in a square, muffin or molded pan. I rarely make cornbread because my partner doesn't like it. BTW, my partner has discovered the world of YouTube cooking and his new thing is making dinner by following the instructions of grandmothers in Spain and Cuba.
