What are you Ladies cooking tonight?

I thought this would be a great thread. I get tired of cooking the same foods every week. Tonight I think I will make chicken and rice casserole. with a green salad.

I made baked spaghetti for supper and individual chocolate pies for everyone for desert.  Tomorrow night looks like homemade chicken pot pie with fresh veggies.  For desert, probably jello..lol..depends how hot it gets.  If it stays fairly cool and I have time, I'll make homemade chocolate chip cookies.  I'll also need to bake some bread.

Mum (who's more like Betty Crocker than Martha Stewart :P)

I had cooked a beef roast and some broccoli the other day but tonight my roomie cooked steak and potatoes. yesterday I made a small meatloaf with some mashed potatoes. I know a lot of starch with tatoes. I get bored cooking sometimes too because it seems like I cook the same thing. Though I have been eating a lot of skinless chicken breasts too with asparagus. And munching on salads for snacks.

Well, I love veggies except for beans. You have to try the asparagus but I love it grilled, something I learned from Food Network. Your dinner sounds yummy but those yams and pork chops will clog up some stuff. I hope you're not cooking with vegetable oil.

I made kidney beans with onions, garlic, green peppers, hot peppers, and okras.  That was seasoned with cumin, coriander, and muchi curry.  We ate that with white rice and sliced cucumbers.

Good ol Spaghetti here from the Italian chick ;0) and green beans...it's just been too hot to cook anything worth while lately, I've BBQ'd more than anything lately so that I don't heat up this small apartment!! 

Keepingfaith:  asparagus are awesome!!  But I am a veggie lover, I learned a quick recipe from my sister a few months back for them...wrap each individual asparagus with a slice of bacon (oooohhhh) and either broil them or bbq and they are soooo good!  My 12 y/o would eat them everyday if I would make them!

No Queen, We baked the pork chops in lemon juice and add just a touch of nutmeg and sugar to the yams. It was great though. You all know i'm from the south. LOL!!

I'm still debating about tonight.  I'll either bake a ham and make some homemade cheese potatoes and baked beans, or I'll go easy and bake some pork chops with yellow rice and steamed veggies. 

Mum - who also needs to bake more bread.

We have several grilled breast left over and a bunch of salad.  I just have to figure out what else to make with it.
Maybe some cheesy smashed potatoes.

I'm not cooking tonight.  We left just after 10am and didn't get back until close to 5:30pm.  I have some left overs, so they can have that or cereal.  I'll cook tomorrow.

Last night I had to cook something simple since our chruch is in revial this week. I cooked Chicken Helper Oriental Rice and rolls. Tonight I have know idea what i'm going to cook as of right now, Still to sleepy to think.

Well with the little ones out of the house..i prolly wont be cooking too often..i may fry some wings tho tonight..eating out gets expensive....maybe make corn n brocolli with cheese

I've tried all sorts of combos eyeing the herbs and seasonings I throw into the flour. Sometimes it works for me sometimes not so I've found its more practical to follow a recipe when seasoning my chicken.
I've used several recipes. There is another I used that had powdered chicken bullion in it but I have no clue what I did with that recipe. It was good though.

I rinse the chicken in cold water. some people brine their chicken but I'm not big on salt so I dont.
Sometimes I use an egg wash sometimes I just throw the wet chicken into the flour mixture.
I usually will coat the chicken then let it sit a while on the counter <not literally on the counter> then carefully pick it up and recoat it. After it sits for a while the coating gets gummy and its easy for you to coat it again with the flour mixture.

Then I just slide it into a pan of hot oil and cook it till it is done.

Flour mixture
3 cups flour, 1 tablespoon seasoned salt, 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon black pepper

That fried chicken sounds yummy, never mind the calories...I gave up frying chikcken when I found that it gets cooked on the outside and stays pink on the inside. A real turn off. But I lurve fried chicken and sometimes indulge iin KFC.

i mariante my chicken in hot sauce and other seasonings (garlic, lawrys's, adobo, sason, etc. wateva i have)..i sprinkle wateva im using into my flour as well....always use fresh wesson or crisco ..i make the best in the fam....

I'll admit before I post what I'm about to post that I'm weird and cheap.  That said, this is what I do to make coating.  If there's a little bit of chips left over - any kind, any flavor - or biscuits, toast, rice crispies (plain), frosted flakes,ect, I put it in the food processor and pulverize it to fine crumbs.  Then, I store it in an airtight jar (or ziplock bag or tupperware).  I just mix my the new stuff with the old.  Before i add it to the flour, I give it a good shake and viola! Instant seasoned breadcrumbs.  I don't fry anything, but I make a mean baked "fried" chicken and baked steak.

I usually bake or grill everything too. I rarely eat fried food. It does taste good though LOL just doesn't sit well always.

I still have a couple of grilled chicken breast. I'm thinking about cutting them up and making chicken tacos.

For supper tonight, Hubby's going to grill hamburgers.  I'll make some baked beans and I got a bag of spicy chili Doritoes to eat with them.  For desert, a sugar-free chocolate cream pie.

For lunch this afternoon, I made hubby some pasta with sauteed chards, purple onion, yellow onion, cilantro, basil, carrots, and garlic from our garden.  I cooked the pasta and the carrots, then put some of the water in a bowl and drained the rest.  I sauteed all the veggies in olive oil then added back the pasta and carrots.  Stir, added a little of the reserved water for a little moisture, and there you go.  It smelled so good cooking and he ate the whole thing.

Can I please have a recipe for the "mean baked chicken" ?  I love fried chicken as I said in an earlier post but it isn't too healthy. During my first trimester I used to buy Southern Fried,  (the one you buy in the supermarket ) and then just pop that into the oven. It would be nice to able to make my own from scratch.

I got my chinese food  ;D

I ordered chicken fried rice and asked them to put vegies in it like vegetable fried rice.
The container will make three meals for me. I really wanted to order that and moo goo gia pan, and vegetable lo mein.

God all that food would last me forever. It would have cost too much though. So I stuck with one item.

Tonight we had homemade stew w/ meat, potatoes, carrots, and white rice.  Movie mix for dessert.

Tomorrow night's meal will depend on how hot it gets.  LOL..probably cereal.

i made pepper chicken last night (like pepper steak) n yellow rice....i put white onions , green onions, garlic, green and red peppers, and salt n pepper to taste n i have to say it was really good...i made more that night for yungin....he loves my cooking....

We had taco lasagna, or "what you cook when you look in your freezer and can't figure out what to cook".  I just took out a package of flour tortillas, ground meat, cheddar and mozz. cheese.  Browned and drained the meat.  Mixed it with taco seasoning and water (according to the package).  I put down a layer of tortilla strips in the bottom of a 10x13 baking pan, then put some of the meat, then cheese, then more tortillas, cheese, and on.  I ended with a layer of tortilla strips.  This is the only layer that i buttered so they wouldn't burn.  Baked it at 350 for about 35minutes.  The pan is now empty ;D

You could easily add a drained can of corn to the meat, a layer of refried beans mixed with sour cream, salsa,  tomatoes with green chilis, or just about whatever else.  Just keep right on layering.  If you are layering a lot, you'll want to exchange the 10x13 baking pan with a deeper lasagna pan.

Im at work tonight girls so that means i'm cooking nothing. I don't get off until 11:30 p.m.
